Often referred to as the King of cheeses. Aged for 24-months - this hard cow's milk is produced only in specific regions in Northern Italy, mainly Parma, Reggio Emilia, Modena and Bologna. This cheese has a complex, savory, and umami-rich flavour profile that intensifies with age.
Pairs well with a glass of I Piaggioni Toscano IGT 2021 (Sangiovese’s bright acidity and red fruit balance the cheese’s savory saltiness), Sancerre Blanc Les Montachin AOC 2023 (bright citrus and herb notes contrast the salty edge), Tulin DOC 2021 (ripe cherry character and refreshing acidity make this a classic match with Parmigiano), or Barbaresco Nubiola DOCG 2020 (elegant tannins and earthy complexity stand up to aged Parmigiano).
