Azienda Agricola Marognole Di Corsi Fabi

Le Marognole, a very small, family run winery from the Valpolicella region in Italy.  Their wines are made from dired grapes, traditionally left in the sun for months until dessicated and concentrated, amking powerful, dense and nearly syrupy wines whose intensity of flavour can be overwhelming without proper aging.  This process is deeply integrated into the wineries of the region, but very few wineries take the drying process (known as passito) and extend it beyond the classic categories.  They have integrated the passito process into nearly every aspect of their winemaking, and view it more as a flexible technical tool rather than a style category.
