Chef Coulson Armstrong is the Culinary Director of Our House Hospitality Company and winner of Top Chef Canada Season 12. Known for his ingredient-driven, globally inspired cooking, he has helped earn Prime Seafood Palace recognition on the list of Canada’s 100 Best Restaurants and The World’s 50 Best Discovery. Working alongside longtime collaborator Matty Matheson, Armstrong has helped bring to life concepts including Matty’s Patty’s Burger Club, Prime Seafood Palace, Rizzo’s House of Parm in Crystal Beach, and The Iron Cow Public House in Hamilton, while also leading recipe development for Matheson Food Company. Together, they balance Matheson’s bold, instinctive creativity with Armstrong’s refined execution, creating restaurants rooted in exceptional ingredients, genuine hospitality, and food that feels both elevated and deeply personal.
