Description

We have paired wines form the legendary Querciabella winery with prime cuts of wagyu and lamb! Querciabella utilize a 100% plant‑based approach to biodynamic and vegan farming and are one of the most awarded wineries in Tuscany! They now represent the largest extension of certified organic vineyards in all of Italy and are one of the most environmentally active, socially conscious and uniformly excellent wineries in the world! We truly love these wines and this producer.

1 bottle Mongrana Bianco Toscana IGT, 2021, QUERCIABELLA, TUSCANY, ITALY:

Mongrana Bianco is like the fragrance of summer air: warm and tangy aromas of fresh fruit, aromatic herbs and the briny scent of the sea. This vermentino centric wine is a perfect white to start off any meal.

1 bottle Mongrana Red Maremma Toscana DOC, 2019, QUERCIABELLA, TUSCANY ITALY:

Mongrana is vibrant, intense and truly the definition of a Super Tuscan. It is charming to drink on its own or paired with lamb or wagyu. Mongrana has been hailed as one of the “Top 100 wines of the World” by Wine Spectator and gets its name from that of the noble family of knights depicted by the Italian Renaissance poet Ludovico Ariosto in his masterpiece Orlando Furioso.

Turpino’s evocative character is a tribute to three noble varieties that thrive in Maremma, fitting perfectly together like the tessera of a fine mosaic. Turpino is Maremma's rise to the Super Tuscan challenge, and it is a worthy challenger! Only five great vintages have been released so far, all met with great reception and Turpino 2017 doesn’t fall short of its predecessors.

8x Canadian lamb chops, frenched cap off (comes in two packages of 4 each):

From Innisfail Alberta, these come from ethically raised, grass-fed and grain finished lambs, and are perfect for pan roasting. Frenched on the bone for a memorable presentation.

1x 28oz Tajima Australian Wagyu Chateaubriand

From NSW Australia, this is the prized center of the tenderloin from certified Wagyu beef, this is the most luxurious cut of beef there is! With a marble score of 7 – 8. 


Want help cooking: Lamb Chops: we recommend marinating the lamb chops in a mixture of lemon juice, herbs, minced garlic, olive oil, and white wine, before cooking in a pan or on a hot grill until pink in the middle. For the Wagyu, we recommend bringing it to room temperature, seasoning with salt and pepper and searing it on all sides in a cast iron skillet while basting with butter before transferring to a wire rack over a pan and roasting at 375 F for 15-18 minutes (for medium rare), before resting and slicing. Roast it whole or slice into individual filet mignon wagyu steaks and grill.
