Description
The history of the Pasetti Winery goes back 5 generations. In the 60's, the winery started its own vinification with extremely positive results. In the 80's, Testarossa (which literally means "red head"), the flagship of the winery was born. Today, the Pasetti family still runs the winery.
White vinification with a cryomaceration at 4 degrees Celsius for 24 hours, precrushing, soft-pressing and a successive refrigeration for a better decantation. Fermentation occurs in steel tanks by using selected yeasts at 11 to 14 degrees Celsius. Aged for 2 months in steel tanks on its fine lees, then for 4 months in the bottle.
