Organic Certified Catarratto from a Royal Sicilian family. Spadafora is an old noble Sicilian family whose winemaking history starts more than 30 years ago. Their wines express the special terroir and character of this area of Sicily. Spontaneous fermentation on a pied de cuve of their grapes, without sulfur dioxide, at a controlled temperature in cement vats. Aged for 2 months in concrete vats and 2 months in bottles.
